Cheese Bread Pudding

Five Slices Of Bread, Without The Crust

One, And One Half Cups Of Milk

One Cup Grated Cheddar Cheese

Three Eggs, Slightly Beaten

One Teaspoon Worcestershire Sauce

Salt To Taste

Preheat the oven to three hundred degrees. Butter a pan. Cut the bread into pieces. Scald the milk, cool slightly, and beat in the cheese, eggs, Worcestershire sauce, and salt. Pour into the pan, add the bread squares, and bake for forty-fifty minutes, or until firm.

Mint Sauce

One Half Cup Of White Vinegar

One Fourth Cup Of Sugar

One Half Cup Of Minced Mint Leaves

Put the vinegar, and sugar into a pan. Heat until it boils, and the sugar dissolves. Pour the sauce over the mint, and let stand at least one hour.

Cucumber Cream

One Cucumber

One Half Cup Of Sour Cream

Two Tablespoons Of Vinegar

Salt To Taste

Chop the cucumber. Put into a bowl, and stir the sour cream, vinegar, and salt all together.

Brown Butter

A dark brown sauce with a nutty, tart taste. Use on sweetbreads, and white fish.

Five Tablespoons Of Butter

Two Teaspoons Vinegar

Melt the butter over low heat in a pan. Stir, and cook until the butter turns dark brown. Add in the vinegar, and blend well.

Mushroom Broth

One Half Pound Of Mushrooms

One Half Teaspoon Of Grated Onion

Four Cups Of Cold Water

Salt To Taste

Put the mushrooms, onion, and cold water into a pan, and simmer, partially covered, for about an hour. Remove from heat, and let stand for at least four hours, overnight if possible. Strain, and reheat, adding salt to taste. Mushroom broth can be used as stock in vegetable soups, or in place of water in making meat stocks.

Cheese Straws

One Fourth Pound Of Butter

Two Cups Of Flour

One Fourth Teaspoon Cayenne Pepper

One Pound Grated Cheddar Cheese

Salt To Taste

Preheat the oven to four hundred degrees. Cream the butter until light, add in the flour, cayenne pepper, cheddar cheese, and salt. Knead until dough forms a ball, and then roll out onto a floured board. Cut into strips, and place on a greased cookie sheet, and bake for six minutes until golden brown.
